How come you can see stars at the horizon if the earth is flat?

While I believe that the earth is a sphere that is billions of years old and insignificant in an infinite universe, I always find myself looking at the horizon when I have a window seat on a flight or when I’m at the beach and wondering “what if?”

But when I was staying with my Aunty and cousins for a few weeks over the Christmas holidays last year, I was at the beach at sunset thinking about this flat earth stuff when the sun went down and I saw stars appear at the horizon, and when I thought about them in the context of a flat earth it made no sense.

The flat earth reason for not being able to see across long distances is because you can’t see through the atmosphere at that distance, but if that were true I wouldn’t be able to see the stars at the horizon either.
